Simple, Delicious Sausage & Chorizo Pasta Recipe For Dinner Every Night!

If you’re after a hearty, flavour-packed meal that feels like a hug in a bowl, this Sausage & Chorizo Pasta is it. Spicy chorizo meets savoury sausage in a rich, comforting sauce that’s ready in under 30 minutes; perfect for cosy nights in or feeding a crowd without the stress.
This dish actually started as a happy accident but quickly became a go-to in our kitchen. The best bit? It’s endlessly flexible; add chilli for heat, bacon for smokiness, mushrooms for depth, or even sweetcorn for a touch of sweetness. Whatever you throw in, it just works.

Ingredients
Ingredients required:
- Pasta! (rigatoni, penne or tagliatelle are personal favourites)
- 4 sausages
- A couple of slices of chorizo, diced.
- 1 tbsp olive oil
- 1 onion, diced.
- 2 garlic cloves, crushed.
- 1 bell pepper, diced.
- 400g can chopped tomatoes
- 1 vegetable stock
- 1 tbsp tomato puree
- Italian herb seasoning
- 1 tsp sugar
- 1 tsp Worcestershire sauce (optional)
Instruments required:
- Large frying pan, with lid.
- Wooden spoon
Method:
1. Heat the olive oil in a large pan over medium heat.
2. While your oil is heating up, season your sausages with a pink of salt and pepper, and dice your bell pepper and onion.
3. Add the crushed garlic cloves and diced onion to your pan and sauté for about a minute, or until lightly browned.
4. Add the sausages and diced pepper to the pan. Fry with the lid on initially to help the sausages cook through. Once they start to brown, remove the lid and add the chorizo. Fry until the sausages develop a crispy edge.

5. Stir in the chopped tomatoes, vegetable stock, 1 tbsp of tomato puree, 1 tsp of Worcestershire sauce, 1 tsp of sugar and season with salt, pepper, oregano and basil; mix everything together then bring to the boil.
6. Serve in a bowl with a bit of cheese on the top!
