Ingredients

To whip up this easy peasy crumble, you'll need the following ingredients:

For the filling:

- 120g plain flour

- 60g caster sugar

- 90g unsalted butter (total — 60g for crumble, 30g for fruit)

- 300g Braeburn apples, peeled and chopped

  - 30g demerara sugar

  - 115g blackberries

Instruments required:

  - Large mixing bowl

  - Sieve

  - Measuring scales

  - Medium saucepan

  - Peeler

  - Knife & Chopping board

  - Mixing spoon

  - Serving dish

Preparing the Filling

Begin by preheating your oven to 190°C/Gas 5. While the oven is heating, peel, core, and slice the apples into thin wedges.

Making the Crumble Topping

  1. In a large bowl, combine 120g of plain flour and 60g of caster sugar.

  2. Add 60g of unsalted butter and use your fingertips to rub it into the flour until it resembles light breadcrumbs. Take care not to overwork the mixture, as this can result in a dense crumble.

  3. Sprinkle mixture evenly over a baking sheet and bake for 15 mins or until lightly golden.

  4. In a medium saucepan, melt 30g of unsalted butter and 30g of demerara sugar over medium heat. Cook for 3 minutes, stirring, until the mixture turns into a light caramel.

  5. Stir in the diced apples and cook for a further 3 minutes. Add 115g blackberries and cook for another 2-3 minutes.

  6. Remove from the heat, cover, and leave to rest for 2-3 minutes to continue cooking in the warmth of the pan.

Assembling and Baking

Transfer the compote to a serving dish, then scatter the baked crumble evenly over the top. For added texture, I sometimes mix a tbsp of the baked crumble into the compote before spreading the rest on the top. Let it cool & you're done!

Serving Suggestions

Serve your warm Apple and Blackberry Crumble with a generous scoop of vanilla ice cream, a dollop of whipped cream or custard.

This dessert is perfect for family gatherings, dinner parties, but it is a favourite of mine for a cosy night in. You can also make it ahead of time and reheat it when you're ready to serve.

Conclusion

Baking an Apple & Blackberry Crumble couldn’t be easier; or more satisfying. Sweet, tart, and incredibly cosy, it’s the kind of dessert that wins hearts with minimal effort. I have used Pink Lady apples before and they tasted just as good, so don’t feel tied to Braeburns! I have, however, lost a wooden spoon to blackberry stains, so watch out for that. Happy baking!
